Ingredients

Scale
  • 8 ounces pasta (penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Once al dente, drain the pasta and let it cool.
  2. Combine the fresh ingredients: In a large mixing bowl, gather the cooled pasta, halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced Kalamata olives, and crumbled feta cheese.
  3. Whisk together the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  4. Dress the salad: Pour the dressing over the pasta salad mixture and toss gently to combine.
  5. Serve and enjoy: Serve your Greek Pasta Salad chilled or at room temperature.

Notes

Make sure to cool your pasta completely before adding the veggies and feta to prevent them from wilting. Store leftovers in an airtight container in the refrigerator for up to 3 days.
