A refreshing Greek Pasta Salad with chicken, vibrant veggies, and tangy feta cheese, perfect for summer gatherings.

Ingredients

  • 8 ounces of pasta (penne or rotini)
  • 1 cup cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Once done, drain it well and allow it to cool.
  2. Combine the cooled pasta with diced chicken, halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced Kalamata olives, and crumbled feta cheese.
  3. Whisk together olive oil, red wine vinegar, lemon juice, dried oregano, salt, and pepper in a separate bowl.
  4. Pour the dressing over the pasta salad mixture and toss everything together until well combined.
  5. Chill your Greek Pasta Salad in the refrigerator for at least 30 minutes before serving.

Notes

Make sure to cool your pasta thoroughly before mixing with fresh vegetables. This salad can be made ahead and lasts for up to 3 days in the refrigerator.
