A delightful Mediterranean dish featuring marinated chicken breasts topped with tangy feta and fresh lemon.

  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 large lemons (juice)
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (Optional garnish)

Instructions

  1. Marinate the Chicken: In a large bowl, combine the lemon juice, minced garlic, olive oil, oregano, salt, and pepper. Add the chicken breasts to the bowl, making sure they’re well-coated in the marinade. Cover and let it sit for at least 15 minutes.
  2. Preheat the Pan: Heat a large skillet over medium-high heat. Drizzle a little olive oil in the pan to ensure a good sear.
  3. Sauté the Chicken: Once the pan is hot, add the marinated chicken breasts. Sear them for about 6-7 minutes on each side, or until golden brown and cooked through.
  4. Add the Feta: In the last few minutes of cooking, sprinkle the crumbled feta cheese over the chicken.
  5. Rest and Garnish: Once the chicken is done, remove it from the heat and let it rest for a few minutes. Garnish with fresh parsley and a little extra lemon juice.
  6. Serve: Plate the chicken and serve it immediately, delighting everyone in the glorious Mediterranean flavors!

Notes

Marinate overnight for fuller flavor. Adjust cooking time for bone-in chicken.
