A delicious and healthy deconstructed version of a traditional gyro, featuring marinated chicken, fresh veggies, and creamy tzatziki.

Ingredients

  • 1 lb chicken breast, cut into strips
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 pitas or flatbreads
  • 1 cup cooked rice or quinoa
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. Marinate the Chicken: In a bowl, combine olive oil, oregano, garlic powder, salt, and pepper. Add the chicken strips and marinate for at least 30 minutes.
  2. Cook the Chicken: In a skillet, add the marinated chicken and cook over medium heat until cooked through, about 7-10 minutes.
  3. Warm the Pitas: Warm the pitas or flatbreads in the oven or on a skillet.
  4. Assemble the Bowls: In bowls, layer the cooked rice or quinoa at the bottom, followed by the cooked chicken, cucumber, cherry tomatoes, red onion, and feta cheese.
  5. Add Tzatziki & Garnish: Drizzle tzatziki sauce over the top and garnish with fresh parsley.
  6. Serve and Enjoy!: Serve the bowls immediately.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
