A rich, decadent gluten-free vegan chocolate cake that is quick and easy to make in just one bowl. Perfect for any occasion!

  • 1 cup gluten-free all-purpose flour
  • 1 cup cocoa powder
  • 1 cup sugar (or coconut sugar)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plant-based milk
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan.
  2. Combine the gluten-free flour, cocoa powder, sugar, baking soda, and salt in a large mixing bowl.
  3. Add the applesauce, plant-based milk, oil, vanilla extract, and apple cider vinegar to the dry ingredients. Mix until just combined.
  4. Pour the batter into the prepared cake pan and smooth the top.
  5. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool the cake in the pan for a few minutes before transferring it to a wire rack. Let it cool completely before serving.

Store covered at room temperature for up to 3 days, or refrigerate for up to a week. For longer storage, freeze slices wrapped tightly for up to three months.
