A moist and delicious gluten-free apple cake made with almond flour, perfect for any occasion.

  • 3 medium apples, peeled and diced
  • 3 large eggs
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Combine almond flour, baking soda, cinnamon, and salt in a mixing bowl.
  3. Whisk together the eggs, honey (or maple syrup), melted coconut oil, and vanilla extract in another bowl.
  4. Mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the diced apples until evenly distributed throughout the batter.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for about 10 minutes before carefully removing it.
