A comforting and nourishing soup featuring bok choy, ginger, and garlic, perfect for chilly evenings.

Ingredients

  • 2 cups bok choy, chopped
  • 1 tablespoon ginger, minced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup mushrooms, sliced (optional)
  • Salt and pepper to taste
  • 1 tablespoon soy sauce (optional)
  • Green onions for garnish

Instructions

  1. Heat a small amount of oil over medium heat in a pot.
  2. Add the minced garlic and ginger, sautéing until fragrant.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the bok choy and mushrooms if using, and simmer for about 5-10 minutes until bok choy is tender.
  5. Season with salt, pepper, and soy sauce if desired.
  6. Serve hot and garnish with chopped green onions.

Notes
