  • 1 cup unsalted butter, softened

  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix the dry ingredients: whisk together flour, cocoa powder, baking soda, and salt.
  3. Cream the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, then stir in buttermilk and vanilla extract.
  5. Combine the dry mix into the wet mixture until just combined.
  6. Fold in coconut and pecans.
  7. Prepare the batter evenly in the prepared pans.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Cool the cakes in pans for 10 minutes, then transfer to racks to cool completely before frosting.

Consider using high-quality cocoa powder for richer flavor. For buttermilk, mix milk with vinegar or lemon juice.
