  • 1 lb raw shrimp (peeled and deveined)
  • Salt and freshly ground black pepper (to taste)
  • 3 tablespoons olive oil
  • 4 cloves garlic (sliced or minced)
  • 1½ cups cherry tomatoes (halved)
  • ½ teaspoon red pepper flakes (optional)
  • ¼ cup reserved pasta cooking water
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon lemon juice (optional)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a vigorous boil. Once boiling, add the spaghetti and cook until al dente, about 8-10 minutes.
  2. Prepare the Pasta Water: Before draining, reserve ¼ cup of the pasta cooking water and set it aside. Drain the spaghetti and return it to the pot.
  3. Season the Shrimp: In a bowl, season the shrimp with salt and freshly ground black pepper, ensuring they’re evenly coated for maximum flavor.
  4. Sear the Shrimp: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the shrimp and cook for 1-2 minutes per side until they turn pink and are cooked through. Remove from skillet and set aside.
  5. Sauté the Garlic: In the same skillet, add the remaining 2 tablespoons of olive oil. Sauté the sliced or minced garlic for about 30 seconds until fragrant, being cautious not to burn it.
  6. Cook the Tomatoes: Add the halved cherry tomatoes and, if using, the red pepper flakes to the skillet. Cook for about 3-4 minutes, stirring occasionally, until the tomatoes soften and begin to burst.
  7. Combine All Ingredients: Return the cooked shrimp to the skillet. Add the drained spaghetti and reserved pasta water, tossing everything gently to combine, ensuring the spaghetti is well-coated with the flavorful sauce.
  8. Final Touches: Stir in the chopped parsley and lemon juice (if using), adjusting seasoning to your taste.
  9. Serve Immediately: Scoop your beautiful pasta into bowls and serve it hot, topped with freshly grated Parmesan cheese if desired!
