A comforting dish of tender chicken breasts and creamy Parmesan rice with a rich garlic flavor.

  • 2 chicken breasts
  • 2 tablespoons garlic, minced
  • 1 cup Parmesan cheese, grated
  • 2 cups chicken broth
  • 1 cup rice
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove and set aside.
  2. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add rice and chicken broth to the skillet, stirring to combine. Bring to a boil.
  4. Reduce the heat to low, cover, and let simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
  5. Stir in the butter and parmesan cheese until melted and creamy.
  6. Return the chicken to the skillet, coating it in the creamy sauce.
  7. Garnish with parsley if desired, and serve warm.

Notes

For best results, ensure your chicken is of even thickness to cook uniformly. Consider adding some chopped spinach or broccoli towards the last few minutes of cooking.
