Tender chicken bites sautéed in garlic butter, tossed with creamy pasta and freshly grated Parmesan, all coming together for a comforting meal.

  • 1½ pounds boneless, skinless chicken breasts (or thighs)
  • 4 tablespoons butter
  • 6 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch of red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Juice of half a lemon
  • 2 tablespoons fresh parsley, chopped
  • 12 ounces pasta (fettuccine or penne)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1½ cups whole milk
  • ½ cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Prepare the Chicken: Cut your chicken into bite-sized pieces and season with Italian seasoning, paprika, salt, black pepper, and a pinch of red pepper flakes.
  2. Sauté the Chicken: In a large skillet, melt 4 tablespoons of butter with 2 tablespoons of olive oil over medium heat. Add the chicken and sauté for 6-8 minutes until golden and cooked through.
  3. Add the Garlicky Goodness: Once cooked, add the minced garlic to the skillet and sauté for another minute until fragrant.
  4. Finish with Lemon and Parsley: Remove from heat, squeeze lemon juice over the chicken, and garnish with parsley.
  5. Cook the Pasta: In another pot, boil salted water and cook the pasta according to package instructions. Drain and set aside.
  6. Create the Creamy Sauce: In the same skillet, melt 2 tablespoons of butter over medium heat, add 3 cloves of minced garlic, and sauté for 30 seconds. Add flour, whisk to form a roux.
  7. Whisk in Milk and Cream: Slowly add 1½ cups of milk and ½ cup of heavy cream, whisking continuously until thickened (about 3-5 minutes).
  8. Stir in Cheese and Seasonings: Remove from heat and stir in Parmesan cheese, salt, black pepper, and nutmeg.
  9. Combine Pasta and Chicken: Add cooked pasta and garlic butter chicken to the sauce and toss until well coated.
  10. Garnish and Serve: Serve warm, optionally garnishing with extra parsley.

Notes

Pairs beautifully with a crisp green salad and a glass of chilled white wine. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
