Delicious and colorful fresh spring rolls filled with shrimp or tofu, fresh herbs, and vegetables, perfect for gatherings or a light meal.

Ingredients

  • Rice paper wrappers
  • Shrimp or tofu (cooked)
  • Rice noodles
  • Lettuce leaves
  • Fresh herbs (mint, cilantro, basil)
  • Vegetables (carrots, cucumber, bell peppers)
  • Peanut sauce or hoisin sauce for dipping

Instructions

  1. Prepare the rice noodles: Cook the rice noodles according to package instructions, then drain and set them aside.
  2. Soften the rice paper wrappers: Fill a shallow plate with warm water and dip each rice paper wrapper until soft, about 10 seconds.
  3. Set up your rolling station: Lay the wrapper flat on a clean surface, making sure you have plenty of room to work.
  4. Assemble your filling: Place a small amount of lettuce, fresh herbs, cooked rice noodles, sliced vegetables, and shrimp or tofu onto the lower third of the wrapper.
  5. Roll it up: Fold the sides of the wrapper in, creating a snug little parcel. Start rolling tightly from the bottom up, holding everything in securely.
  6. Repeat: Continue rolling with the remaining ingredients until you have a beautiful plate of fresh spring rolls ready to be devoured.
  7. Serve and enjoy: Serve with peanut sauce or hoisin sauce on the side for dipping.

Notes

Best enjoyed fresh, but can be stored for up to two days in an airtight container. Dampen with warm water before serving if stored.
