Delight in these fresh, cheesy quesadillas infused with vibrant Mediterranean flavors, featuring fresh spinach, cherry tomatoes, and tangy feta.

Ingredients

  • 4 flour tortillas (8-inch size)
  • 2 cups fresh spinach, roughly chopped
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh oregano or basil, chopped (optional)
  • 1 tablespoon olive oil, extra virgin recommended
  • 1 clove garlic, minced
  • 1 teaspoon fresh lemon juice
  • Salt and pepper, to taste

Instructions

  1. Prepare your ingredients by washing and chopping your fresh spinach, halving the cherry tomatoes, dicing the red onion, and mincing the garlic.
  2. Mix the filling in a medium bowl by combining spinach, cherry tomatoes, red onion, garlic, herbs, feta cheese, mozzarella, lemon juice, and black pepper.
  3. Heat a non-stick skillet over medium heat and add about 1 teaspoon of olive oil.
  4. Assemble the quesadilla by laying one tortilla flat and spooning approximately 3/4 cup of filling onto half of the tortilla, then fold it over.
  5. Cook each quesadilla in the skillet for 4-5 minutes per side, or until golden brown and crispy.

Notes

Serve hot with a cucumber and yogurt dip or a fresh Greek salad. Can be customized with additional veggies or proteins.
