French Onion and Butter Bean Soup

A warm and comforting soup that combines sweet caramelized onions with the creamy texture of butter beans, topped with melted Gruyère cheese.

Ingredients

  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 can (15 oz) butter beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 cup Gruyère cheese, grated
  • 4 slices of baguette
  • Salt and pepper to taste
  • Fresh thyme (optional, for garnish)

Instructions

  1. Sauté the onions in olive oil over medium heat until caramelized, about 20-30 minutes.
  2. Add the butter beans to the caramelized onions and cook for a few more minutes.
  3. Combine in the vegetable broth and bring to a boil; reduce heat and simmer for 10 minutes.
  4. Season with salt and pepper to taste.
  5. Preheat the oven broiler.
  6. Assemble the soup bowls by ladling soup into oven-safe bowls, topping with a slice of baguette and Gruyère cheese.
  7. Broil the bowls until the cheese is melted and bubbly, about 3-5 minutes.
  8. Garnish with fresh thyme if desired and serve hot.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3-4 days. Reheat gently on the stove, adding a splash of water or broth to revive the soup’s creamy texture.
