  • 3 large egg whites

  • 1/2 cup granulated sugar
  • Food coloring (optional)
  • Filling of choice (e.g., buttercream, ganache, jam)

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Whisk together the almond flour and powdered sugar until well combined.
  3. Beat the egg whites with cream of tartar until soft peaks form; add granulated sugar gradually until stiff peaks form.
  4. Add food coloring if desired and mix until fully incorporated.
  5. Fold the almond flour mixture into the meringue in batches until it reaches a lava-like consistency.
  6. Transfer the mixture to a piping bag and pipe small circles onto the prepared baking sheets.
  7. Tap the baking sheets on the counter to release air bubbles and let sit for 30-60 minutes.
  8. Bake for 15-20 minutes until firm to the touch.
  9. Cool completely on the baking sheets.
  10. Fill and sandwich the macarons with your choice of filling.
