Delicious and convenient breakfast burritos that can be made ahead and frozen for busy mornings.

Ingredients

  • 8 large eggs
  • 1 cup milk
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup cooked breakfast sausage or bacon
  • 2 cups shredded cheese
  • 8 large flour tortillas
  • Salt and pepper to taste

Instructions

  1. Whisk together the eggs and milk in a large bowl. Add salt and pepper to suit your taste.
  2. Sauté diced bell peppers and onions in a skillet over medium heat until soft, about 5 minutes.
  3. Add cooked breakfast sausage or bacon to the skillet, mixing with the sautéed veggies.
  4. Pour the egg mixture into the skillet and stir until everything is fully cooked and eggs are fluffy.
  5. Lay out the flour tortillas and divide the egg mixture evenly among them. Sprinkle cheese on top.
  6. Roll each tortilla tightly, tucking in the ends to secure the filling.
  7. Wrap the rolled burritos in foil or plastic wrap.
  8. Freeze the wrapped burritos in a freezer-safe bag for up to 3 months.
