Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons granulated sugar

Instructions

  1. Prepare the Pancake Batter: In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  2. Combine the Wet Ingredients: In another bowl, mix the milk, egg, and melted butter until just combined.
  3. Bring It Together: Pour the wet mixture into the dry ingredients and stir gently, leaving lumps in the batter.
  4. Whip Up the Cheesecake Filling: Beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  5. Preheat the Skillet: Heat a non-stick skillet over medium heat and lightly grease it.
  6. Pour the Pancake Batter: Spoon 1/4 cup of batter into the skillet.
  7. Add the Cheesecake Filling: Dollop a spoonful of cheesecake filling in the center of the pancake batter.
  8. Cook to Perfection: Cook until bubbles form on the surface, about 2-3 minutes.
  9. Flip and Golden Brown: Flip the pancake and cook for an additional 2-3 minutes until golden brown.
  10. Make the Strawberry Topping: Mix sliced strawberries with sugar and let sit for 10 minutes.

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking. Don’t overmix the batter to avoid dense pancakes.
