Delightful and airy, Fluffy Japanese Pancakes bring a touch of whimsy to your breakfast, reminiscent of a quaint café in Tokyo.

Ingredients

  • 4 large eggs
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 tablespoon sugar
  • Butter for cooking
  • Maple syrup and whipped cream for serving

Instructions

  1. Separate the egg whites and yolks into two bowls. In the yolk bowl, whisk with milk and sugar, then mix in flour and baking powder.
  2. Beat the egg whites until stiff peaks form.
  3. Fold the whipped egg whites into the yolk mixture carefully to retain air.
  4. Heat a non-stick skillet over low heat and grease it with butter.
  5. Cook mounds of batter in the skillet, covered, for 4-5 minutes until bubbles form, then flip and cook for another 4-5 minutes.
  6. Serve warm with maple syrup and whipped cream.

Notes

Use room temperature eggs for better volume. Cook on low heat for even doneness.
