  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • 1/4 cup finely chopped vegetables (spinach, bell peppers, or mushrooms)
  • Cooking spray or oil for greasing the baking dish

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Prepare a muffin tin by spraying it with cooking spray or lightly oiling it.
  3. Whisk the eggs until fully combined and slightly frothy.
  4. Mix in the cottage cheese until well integrated.
  5. Add the shredded cheese, salt, pepper, garlic powder, and onion powder.
  6. Fold in your choice of finely chopped vegetables.
  7. Fill each muffin tin cup about three-quarters full with the egg mixture.
