1 cup plain Greek yogurt
1.5 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup sugar (or a sugar substitute)
1 tablespoon cinnamon
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
Instructions
Preheat your oven to 375°F (190°C).
Combine the Greek yogurt, flour, baking powder, salt, sugar, cinnamon, applesauce, and vanilla extract in a large bowl.
Turn out the dough onto a floured surface and roll it into a rectangle, about ½ inch thick.
Spread a small amount of applesauce on the dough, then sprinkle with cinnamon and sugar.
Roll the dough into a log, keeping the filling inside.
Slice the rolled dough into even pieces, approximately 1-inch thick.
Bake in the preheated oven for 15-20 minutes, or until golden brown.
Cool slightly before serving warm.
Notes
Best enjoyed warm, possibly with extra cinnamon sugar on top. Store leftovers covered at room temperature for 2-3 days or refrigerate for up to a week.
