A warm and comforting Enoki Mushroom Soup packed with umami flavors, perfect for chilly evenings and gatherings.

Ingredients

  • 200g enoki mushrooms
  • 1 liter vegetable broth
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt to taste
  • Pepper to taste
  • 2 green onions, chopped for garnish

Instructions

  1. Heat up the sesame oil in a sturdy pot over medium heat.
  2. Sauté the minced garlic and chopped onion until softened and fragrant.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the enoki mushrooms and soy sauce, then simmer for about 5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with freshly chopped green onions.

Notes
