A refreshing twist on classic Mexican street corn, this Elote Corn Salad is bursting with flavors and perfect for summer gatherings.

Ingredients

  • 4 cups fresh corn kernels (or canned corn, drained)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup crumbled Cotija cheese
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Combine corn, mayonnaise, sour cream, Cotija cheese, cilantro, lime juice, chili powder, salt, and pepper in a large bowl.
  2. Mix well until all ingredients are combined and the dressing coats every kernel.
  3. Chill in the refrigerator for 30 minutes or serve immediately.

Notes

For the freshest flavor, use in-season corn. Can substitute Cotija cheese with feta or goat cheese if necessary.
