A comforting and delicious Eggplant Parmesan, layered with marinara sauce and cheeses, perfect for family gatherings.

Ingredients

  • 2 large eggplants, sliced into 1/4-inch rounds
  • Salt, for sweating the eggplant
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup all-purpose flour
  • 3 large eggs, beaten
  • 1 cup breadcrumbs
  • Olive oil, for frying
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sprinkle salt on both sides of the eggplant slices and let sit for about 30 minutes.
  3. Set up a breading station with flour, beaten eggs, and breadcrumbs in separate shallow dishes.
  4. Dip each eggplant slice into the flour, shaking off any excess, followed by the beaten eggs and breadcrumbs.
  5. Heat olive oil in a frying pan over medium heat and fry the eggplant slices for 2-3 minutes on each side.
  6. Layer the fried eggplant slices with marinara sauce, mozzarella cheese, and Parmesan in a baking dish.
  7. Bake for 25-30 minutes until the cheese is bubbly and golden.
  8. Garnish with fresh basil leaves before serving.

Notes

For a healthier twist, consider oven-baking the breaded eggplant instead of frying.
