A light and fluffy egg white frittata packed with fresh vegetables, perfect for brunch or any meal of the day.

Ingredients

  • 6 egg whites
  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/4 cup onions, diced
  • 1/2 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup feta cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Whisk the egg whites until frothy and season with salt and pepper.
  3. Heat the olive oil in an oven-safe skillet over medium heat.
  4. Sauté the onions and bell peppers until softened.
  5. Add the spinach and cherry tomatoes, cooking until the spinach wilts.
  6. Pour the whisked egg whites over the vegetables and cook for 2-3 minutes.
  7. Sprinkle feta cheese on top (if using).
  8. Transfer the skillet to the preheated oven and bake for 10-12 minutes.
  9. Slice and serve warm.

Notes

Customize with your favorite vegetables and herbs. Can be made ahead and stored for leftovers.
