A healthy, deconstructed version of traditional egg rolls, packed with flavor and easy to make.

Ingredients

  • 1 lb ground pork or turkey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 4 cups coleslaw mix (cabbage and carrots)
  • 3 green onions, sliced
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Instructions

  1. Heat the sesame oil in a large skillet over medium heat until it shimmers slightly.
  2. Add the ground pork or turkey and cook until browned, breaking it apart with a spatula.
  3. Stir in the minced garlic and ginger and let their flavors release by cooking for an additional minute.
  4. Add the coleslaw mix and sliced green onions. Toss everything until the cabbage is wilted.
  5. Pour in the soy sauce and rice vinegar, stirring to mix well.
  6. Season with salt and pepper to your liking.
  7. Serve hot, garnished with sesame seeds if desired.

Notes

Feel free to customize with different proteins or vegetables. Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
