  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup spinach, chopped
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Olive oil or cooking spray

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a muffin tin with olive oil or cooking spray.
  3. Whisk together the eggs, salt, and pepper in a mixing bowl.
  4. Add the diced bell peppers, onions, spinach, and cheese to the egg mixture.
  5. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes or until the egg muffins are set and slightly golden on top.
  7. Let them cool for a few minutes before removing from the tin.
  8. Store in the fridge for meal prep or enjoy warm!

Notes

Experiment with different vegetables or add cooked meats for extra protein.
