A quick and comforting Egg Fried Rice recipe that is perfect for busy weeknights and easy to customize with your favorite vegetables.

Ingredients

  • 2 cups cooked rice
  • 2 eggs
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tablespoons soy sauce
  • 2 tablespoons oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a pan over medium heat until shimmering.
  2. Add the mixed vegetables and sauté until tender, about 3-4 minutes.
  3. Push the sautéed vegetables to one side of the pan and scramble the eggs on the other side, cooking until just set, about 2 minutes.
  4. Once the eggs are scrambled, gently mix them with the sautéed vegetables.
  5. Add the cooked rice, soy sauce, salt, and pepper, stirring well to combine and ensure heated through, about 2-3 minutes.
  6. Stir everything together until well combined and warmed throughout.
  7. Garnish with chopped green onions and serve hot.

Notes

For best results, use day-old rice. Feel free to mix and match veggies based on your preference.
