A comforting one-pan meal featuring smoked sausage and colorful roasted vegetables, perfect for a quick and hearty dinner.

  • 14 oz smoked sausage (sliced)
  • 2 cups baby potatoes (halved)
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 red onion (sliced)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper (to taste)
  • Optional: Parmesan cheese (for topping)

Instructions

  1. Preheat the oven to 400°F (205°C) and line a sheet pan with parchment paper or foil to facilitate cleanup.
  2. Combine sliced smoked sausage, halved baby potatoes, sliced bell pepper, zucchini, and red onion in a large bowl.
  3. Add olive oil, garlic powder, Italian seasoning, paprika, salt, and black pepper. Toss everything until well coated.
  4. Spread the mixture evenly on the prepared sheet pan, giving everything space to roast.
  5. Bake for 25 to 30 minutes, flipping halfway through cooking.
  6. Add Parmesan cheese on top and broil for 2 minutes until melted and golden.
  7. Serve hot, optionally over rice or pasta.

Notes
