A flavorful and simple Mexican rice dish with zesty Rotel tomatoes and warm spices, perfect as a side or main meal.

Ingredients

  • 2 cups of rice
  • 1 can (10 oz) Rotel tomatoes
  • 2 cups of chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup cilantro, chopped (optional)

Instructions

  1. Heat the olive oil in a saucepan over medium heat until shimmering.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and cumin, cooking for another minute until fragrant.
  4. Add the rice and stir to coat it with the oil and spices, allowing it to toast slightly for about 2 minutes.
  5. Pour in the Rotel tomatoes (with juices) and the broth, stirring well to combine.
  6. Bring the mixture to a boil.
  7. Reduce the heat to low, cover the saucepan, and simmer for about 18-20 minutes, until the rice is cooked.
  8. Fluff the rice with a fork, season with salt and pepper, and gently fold in the cilantro if using.
  9. Serve hot as a side dish or a base for your favorite protein.

Notes

Serve with grilled vegetables, spicy chicken fajitas, or black bean tacos.
