A colorful and nutritious pasta salad that’s perfect for any occasion, served cold or at room temperature.

Ingredients

  • 8 oz Pasta (rotini or penne)
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1/2 Red onion, chopped
  • 1 Bell pepper, diced
  • 1/4 cup Olive oil
  • 2 tbsp Vinegar
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Italian seasoning

Instructions

  1. Cook the pasta according to package instructions; drain and let cool.
  2. Combine the cooled pasta, cherry tomatoes, cucumber, red onion, and bell pepper in a large bowl.
  3. Whisk together olive oil, vinegar, salt, pepper, and Italian seasoning in a small bowl.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve chilled or at room temperature.

Notes

Make sure to let the pasta cool before mixing it with the vegetables to keep them crisp. Add protein like grilled chicken or chickpeas to make it more filling.
