Ingredients

  • 2 cups pancake mix
  • 1 1/2 cups milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 lb breakfast sausage
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions (optional)
  • 1/2 cup butter, melted
  • 1/4 cup maple syrup
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • More maple syrup for serving
  • Fresh berries for serving
  • Powdered sugar for dusting
  • Extra butter for greasing the dish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the breakfast sausage in a skillet over medium heat for 5-7 minutes.
  3. Mix the milk, eggs, melted butter, sugar, and vanilla extract in a large mixing bowl.
  4. Combine the pancake mix and a pinch of salt in another bowl, then stir into the wet ingredients until just combined.
  5. Fold in the cooked sausage and shredded cheddar cheese, along with green onions if desired.
  6. Pour the mixture into a greased 9×13 inch baking dish.
  7. Mix together melted butter, brown sugar, and cinnamon; drizzle over the pancake mixture.
  8. Bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  9. Cool for a few minutes before serving warm with maple syrup, powdered sugar, and fresh berries.

Notes

Make ahead by preparing the casserole the night before and refrigerating it. Add extra baking time in the morning.
