Delicious homemade cinnamon muffins that are fluffy, tender, and topped with a crunchy cinnamon-sugar layer, perfect for any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Additional cinnamon and sugar for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the all-purpose flour, granulated sugar, salt, baking powder, and ground cinnamon in a large bowl.
  3. Whisk together the milk, vegetable oil, egg, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Prepare a mixture of cinnamon and sugar, then sprinkle it on top of the batter.
  7. Bake for 15-20 minutes, or until a toothpick inserted comes out clean.
  8. Cool slightly before serving warm.

Notes

Store leftover muffins in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week. Can be frozen for longer storage.
