A delicious and comforting dish of roasted potatoes infused with lemon and garlic, perfect for any meal.

Ingredients

  • 2 pounds Potatoes, peeled and cut into wedges
  • 1/4 cup Olive Oil, extra virgin
  • 1/4 cup Lemon Juice, freshly squeezed
  • 4 cloves Garlic, minced
  • 2 teaspoons Oregano, dried
  • 1 teaspoon Salt, to taste
  • 1/2 teaspoon Pepper, freshly ground
  • 1 cup Vegetable Broth, low-sodium

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a large mixing bowl.
  3. Coat the potato wedges in the marinade.
  4. Transfer the potatoes to a baking dish and pour the vegetable broth over them.
  5. Cover the dish with aluminum foil and bake for 30 minutes.
  6. Uncover and bake for an additional 20-25 minutes, or until golden brown and tender.
  7. Serve hot, garnished with fresh herbs if desired.

Notes

For extra flavor, consider adding crumbled feta or a pinch of red pepper flakes.
