  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • Fresh strawberries, sliced
  • Chocolate shavings

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Creaming together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Using a cookie scoop, portion the dough into a greased muffin tin, pressing down to form cups.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. In a mixing bowl, beat the softened cream cheese until smooth.
  9. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  10. Fold in the whipped cream gently until light and fluffy.
  11. Once the cookie cups are cool, fill each cup with the cheesecake filling and top with sliced strawberries and chocolate shavings.

Notes

Make sure your butter and cream cheese are at room temperature for smooth mixtures. If the cookie cups puff up while baking, press in the center to maintain shape.
