  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup fresh strawberries, diced
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 cup cold butter, cubed
  • 1/4 cup cold water
  • Vegetable oil, for frying

Instructions

  1. Make the Cheesecake Filling: In a mixing bowl, combine softened cream cheese, powdered sugar, diced strawberries, and vanilla extract until smooth and creamy.
  2. Prepare the Dough: In another bowl, mix flour, granulated sugar, salt, and baking powder. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Form the Dough: Add cold water gradually, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Roll Out the Dough: On a floured surface, roll out the dough to about 1/8 inch thick. Cut into circles, approximately 4 inches in diameter.
  5. Fill the Dough Circles: Place a tablespoon of the cheesecake filling in the center of each dough circle. Fold over and seal the edges with a fork.
  6. Heat the Oil: In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).
  7. Fry the Pies: Carefully drop the pies into the hot oil and fry for 2-3 minutes on each side or until golden brown.
  8. Drain and Serve: Remove from oil and drain on paper towels. Serve warm, optionally dusted with powdered sugar.

Notes

For optimal crispiness, reheat leftover pies in the oven at 350°F (175°C) before serving.
