A simple and delightful date cake made with only four ingredients, showcasing the natural sweetness of Medjool dates.

  • 2 cups Medjool dates, pitted and chopped
  • 1 tablespoon baking powder
  • 2 large eggs
  • 1 cup almond flour (or regular all-purpose flour)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the chopped Medjool dates, baking powder, and almond flour together until well combined.
  3. Crack in the two large eggs and stir the mixture vigorously until you achieve a smooth batter.
  4. Pour the mixture into a greased baking pan, smoothing the top with a spatula. Place it in the preheated oven and bake for about 30 minutes.
  5. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack. Slice it into squares and serve!

Notes

Substitute Medjool dates with other soft varieties like Deglet Noor if necessary. For a vegan version, substitute eggs with flax eggs.
