Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta of your choice
  • 1 cup coconut milk or another dairy-free cream
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Sear the chicken in a skillet with oil over medium heat until golden brown, about 6-7 minutes per side. Remove from skillet and slice.
  3. Sauté the minced garlic in the same skillet for about 1 minute until fragrant.
  4. Create the sauce by adding chicken broth and coconut milk; bring to a simmer and cook for about 5 minutes until it thickens slightly.
  5. Combine the pasta and sliced chicken with the sauce, mixing well to coat.
  6. Garnish with fresh chopped parsley and serve hot.

Notes
