A simple and delicious crustless spinach quiche, packed with nutritious greens and protein-rich eggs, perfect for breakfast, brunch, or an easy weeknight dinner.

Ingredients

  • 2 cups fresh spinach, chopped
  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced onion
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the diced onion until it becomes translucent, about 4-5 minutes.
  3. Add the chopped spinach to the skillet and cook until just wilted, about 2-3 minutes.
  4. Whisk together the eggs, milk, salt, pepper, and nutmeg.
  5. Stir in the sautéed spinach, onion, and shredded cheese until well combined.
  6. Pour the mixture into a greased pie dish or baking dish and bake for 30-35 minutes until set and golden on top.
  7. Allow the quiche to cool slightly before slicing and serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
