A comforting and flavorful slow cooker chili packed with tender chicken and white beans, perfect for busy weeknights.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 can (4 ounces) chopped green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional for topping)
  • Sour cream (optional for topping)
  • Chopped cilantro (optional for garnish)

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the white beans, diced tomatoes, green chilies, onion, garlic, cumin, chili powder, and chicken broth over the chicken.
  3. Season with salt and pepper.
  4. Cover and cook on low for 360 minutes or high for 240 minutes.
  5. Before serving, shred the chicken with two forks and stir to combine.

Notes

For added creaminess, stir in a splash of heavy cream or cream cheese before serving. Customize with toppings like shredded cheese and sour cream.
