Ingredients

  • 3 to 4 pounds beef chuck roast
  • 1 onion, chopped
  • 3 carrots, cut into chunks
  • 3 potatoes, cut into chunks
  • 2 cups beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Season the beef roast with salt and pepper.
  2. Place the roast in the crockpot.
  3. Add the chopped onion, carrots, potatoes, and garlic.
  4. Pour in the beef broth, then sprinkle with thyme and rosemary.
  5. Cover and cook on low for 480 minutes or on high for 240 minutes, until the roast is tender.
  6. Serve warm with the vegetables.

Notes

For added flavor, sear the beef roast in a skillet before placing it in the crockpot. Feel free to add more vegetables like celery or bell peppers for extra nutrition. For a thicker gravy, remove some broth after cooking, then mix it with cornstarch and return it to the pot.
