A creamy and dreamy chicken dish that transforms an ordinary dinner into a special occasion, perfect for busy weeknights.

  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped (drained if packed in oil)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil, for garnish (optional)

Instructions

  1. Prepare your crockpot. Make sure it is clean and set to the low or high setting, depending on how quickly you want the dish to cook.
  2. Place the boneless, skinless chicken breasts in the bottom of the crockpot in a single layer.
  3. In a medium mixing bowl, combine the chopped sun-dried tomatoes, heavy cream, chicken broth, grated Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Stir well until all ingredients are fully incorporated.
  4. Pour the cream mixture over the chicken breasts, ensuring that the chicken is well coated.
  5. Cover the crockpot with its lid. If cooking on low, allow the chicken to cook for 6-8 hours. If cooking on high, cook for 3-4 hours.
  6. When the chicken is cooked through and tender, gently shred the chicken using two forks right in the crockpot, or remove it and shred it on a separate plate if preferred.
  7. Stir the mixture together to ensure the flavors are well combined. Taste and adjust the seasoning with more salt or pepper if necessary.
  8. Serve the creamy chicken over pasta, rice, or alongside your favorite vegetables. Garnish with fresh basil if desired for an extra touch.

Notes

For extra creaminess, consider adding a splash of cream cheese to the sauce. Adjust seasoning towards the end to suit your taste preferences.
