A delightful medley of savory sausages and vibrant vegetables slow-cooked to perfection in a crock pot.

Ingredients

  • 1.5 – 2 lbs fresh green beans (trimmed and cut into 2–3 inch pieces)
  • 1.5 lbs small potatoes (halved)
  • 1 large onion (diced)
  • 1 lb chicken or turkey sausage (sliced into rounds)
  • 1/2 cup butter
  • 1 tablespoon Cajun seasoning (divided)
  • 1/2 teaspoon pepper

Instructions

  1. Layer the halved potatoes at the bottom of a large crock pot.
  2. Sprinkle the potatoes with the pepper and half of the Cajun seasoning.
  3. Add the stick of butter on top of the seasoned potatoes.
  4. Incorporate the trimmed green beans and diced onion over the potatoes.
  5. Sprinkle the remaining Cajun seasoning on top.
  6. Lay the sliced chicken or turkey sausage atop the rest of the ingredients.
  7. Cover the crock pot and cook on HIGH for 4 hours or LOW for 6 hours.
  8. Taste the dish and adjust the seasoning if needed before serving.

Notes

Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 3 months. Thaw in the fridge overnight before reheating.
