Crispy cheese-filled pickle bites perfect for parties and gatherings.

  • 1 cup shredded cheddar cheese
  • 1 cup crushed cornflakes
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Prepare Your Breading Station: Set up three shallow dishes: one for the flour, one for the beaten eggs, and one for the crushed cornflakes.
  2. Mix the Seasoned Flour: In the first dish, mix the all-purpose flour with salt, pepper, garlic powder, onion powder, and paprika. Stir well to combine.
  3. Whisk the Eggs: In the second dish, crack the two eggs and whisk them until well beaten.
  4. Prepare the Cornflake Coating: In the third dish, pour in the crushed cornflakes and set aside.
  5. Assemble the Pickle-Cheese Pockets: Take each dill pickle slice and place a small amount of shredded cheddar cheese on one side. Fold the pickle slice over to cover the cheese and create a pocket.
  6. Coat with Seasoned Flour: Carefully dip each pickle-cheese pocket into the seasoned flour, ensuring it’s fully coated. Shake off any excess flour.
  7. Dip in Beaten Eggs: Next, dip the flour-coated pickle-cheese bite into the beaten egg, allowing any excess to drip off.
  8. Roll in Cornflakes: Finally, roll the pickle-cheese pocket in the crushed cornflakes, pressing gently to ensure a good coating sticks. Repeat until all bites are prepared.
  9. Heat the Oil: In a large skillet, heat oil over medium-high heat, about 1/4 inch deep.
  10. Fry the Bites: Once the oil is hot, carefully place a few pickle-cheese bites in the skillet, frying them in batches for about 2-3 minutes or until golden brown and crispy on each side.
  11. Drain Excess Oil: Remove the fried bites and place them on a paper towel-lined plate to absorb excess oil. Repeat until all bites are cooked.
  12. Serve and Enjoy: Serve warm with your favorite dipping sauce such as ranch or spicy mustard.

Notes

Ensure pickles are well-drained for optimal crispiness. Do not overcrowd the skillet while frying.
