A delightful medley of crunchy kale and earthy shiitake mushrooms combined with the comfort of fried rice, perfect for weeknight meals or special occasions.

Ingredients

Scale
  • 2 cups cooked rice
  • 1 cup kale, chopped
  • 1 cup shiitake mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat the olive oil in a large pan over medium heat until it shimmers.
  2. Add the minced garlic and sauté until fragrant, about 30 seconds.
  3. Cook the sliced shiitake mushrooms until tender and flavorful.
  4. Stir in the chopped kale and cook until it wilts.
  5. Add the cooked rice, soy sauce, and sesame oil, mixing well.
  6. Season with salt and pepper to your liking.
  7. Cook for a few more minutes until everything is heated through.
  8. Garnish with chopped green onions and serve hot.

Notes

For extra crunch, roast the kale briefly before adding to the dish. Leftovers can be stored for up to three days.
