1 cup hot water
1/2 cup chopped scallions (green onions)
1/2 teaspoon salt
Oil for frying
Instructions
Make the dough by combining the flour and hot water until a rough dough forms. Knead on a floured surface for 5-10 minutes until smooth. Cover and let rest for 30 minutes.
Roll out the dough into a thin rectangle. Brush with oil, sprinkle with scallions and salt, then roll tightly into a log.
Coil the log into a spiral shape and flatten gently.
Heat oil in a frying pan over medium heat and fry each pancake for 2-3 minutes on each side until golden and crispy.
Serve hot with soy sauce or your favorite dipping sauce.
Notes
For crispy results, use plenty of oil when frying and ensure the dough is rolled thinly. You can make the dough ahead of time and refrigerate it.
