  • 1/2 cup cornstarch

  • 2 cups vegetable oil for frying
  • 2 cups cooked rice (jasmine or basmati preferred)
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 1/4 cup chopped scallions
  • 1 tablespoon sesame seeds (optional)
  • Bang Bang Sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice

Instructions

  1. Mix the coating: In a medium bowl, combine cornstarch, salt, black pepper, garlic powder, and paprika. Mix well to create a flavorful coating for the chicken.
  2. Coat the chicken: Lightly coat the chicken pieces with the cornstarch mixture, pressing gently to help it stick. Shake off any excess flour to ensure even crisp while frying.
  3. Heat the oil: Pour vegetable oil into a frying pan and heat to 350°F (175°C) over medium-high heat.
  4. Fry the chicken: Carefully add the coated chicken pieces into the hot oil. Fry until golden brown and crispy, about 5-6 minutes per batch.
  5. Drain the chicken: Remove the chicken and drain it on a plate lined with paper towels to absorb excess oil.
  6. Whisk the Bang Bang sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice.
  7. Layer the bowl: In a large serving bowl, layer the cooked rice at the bottom.
  8. Add the chicken: Arrange the crispy fried chicken on top of the rice.
  9. Garnish with fresh veggies: Top with shredded carrots, cucumber, and chopped scallions.
  10. Drizzle the sauce: Generously drizzle the bang bang sauce over the top of the bowl.
  11. Finish with sesame seeds: If desired, sprinkle sesame seeds over the bowl.
