A delicious blend of crispy Cajun chicken served over rice, drizzled with spicy mayo and topped with fresh green onions.

  • 2 tablespoons Cajun seasoning
  • 1 cup rice
  • 2 cups water or chicken broth
  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha or hot sauce
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Cook the rice according to package instructions, using either water or chicken broth for added flavor.
  2. Season the chicken breasts generously with Cajun seasoning, salt, and pepper.
  3. Heat oil in a skillet over medium-high heat until hot.
  4. Sauté the seasoned chicken breasts for about 5-7 minutes on each side or until golden brown and crispy.
  5. Prepare the spicy mayo by mixing mayonnaise and sriracha in a small bowl.
  6. Rest the chicken for a few minutes after cooking, then slice it into strips.
  7. Assemble the bowl by placing rice at the bottom, topping with sliced chicken, drizzling spicy mayo, and sprinkling chopped green onions.

Notes

For a milder dish, reduce the Cajun seasoning. Leftovers can be stored in airtight containers for up to 3 days.
