A delightful blend of cheesecake and crème brûlée topped with a caramelized sugar crust.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar (for crust)
  • 1/2 cup unsalted butter, melted
  • 4 packages cream cheese, softened
  • 1 cup sugar (for filling)
  • 4 eggs
  • 1 tablespoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix together graham cracker crumbs, 1/3 cup sugar, and melted unsalted butter. Press into a springform pan.
  3. Beat cream cheese with 1 cup sugar until smooth. Add eggs one at a time and mix well. Stir in vanilla extract.
  4. Pour cream cheese mixture over the prepared crust and smooth the top with a spatula.
  5. Bake in the oven for about 50 minutes until edges are set and center jiggles slightly.
  6. Cool at room temperature, then refrigerate for at least 4 hours or overnight.
  7. Whip heavy cream until peaks form and spread over the cheesecake. Sprinkle with 1/4 cup sugar and caramelize with a kitchen torch.

Notes

Allow cream cheese to sit out for 30 minutes before mixing to prevent lumps. Use a water bath for even baking.
