Indulge in the creamy custard topped with a caramelized sugar crust, a true classic dessert delight.

Ingredients

  • 2 cups heavy cream
  • 1 vanilla bean (or 1 teaspoon vanilla extract)
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream and split vanilla bean (if using) over medium heat until it begins to simmer. Remove from heat and let steep for 15 minutes.
  3. In a bowl, whisk together egg yolks and granulated sugar until pale.
  4. Slowly add the cream to the egg mixture, whisking continually to prevent curdling.
  5. Strain the mixture through a fine sieve into a measuring cup or bowl to ensure a silky smooth custard.
  6. Divide the mixture into ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins to create a gentle steam bath.
  7. Bake for 30-40 minutes, until set but still slightly jiggly in the center.
  8. Let cool at room temperature, then refrigerate for at least 2 hours or overnight to achieve the perfect texture.
  9. Before serving, sprinkle brown sugar on top of each ramekin and caramelize with a kitchen torch until golden. Let it cool for a minute before serving.

Notes

Serve with fresh berries, whipped cream, or vanilla ice cream. Store leftovers in the refrigerator for 2-3 days.
