  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup milk or cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Fresh cilantro, for garnish

Instructions

  1. Sautéing onion and garlic: In a large pot, sauté the diced onion and minced garlic over medium heat until fragrant, about 5 minutes.
  2. Combining ingredients: Add the shredded chicken, white beans, corn, chicken broth, cumin, chili powder, salt, and pepper. Stir to combine.
  3. Simmering the chili: Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Adding creaminess: Stir in milk or cream and shredded cheese until melted and well combined.
  5. Final taste adjustment: Taste and adjust seasoning if needed.
